I made this for company and it was AMAZING! I would not change a thing! The only problem is that it says it serves 8 - but it was so good everyone ate a lot so only enough for 6!

Will make it again!!! Winner for my husband. Maybe a chili baked potato dish would work, too...? We had some turkey kielbasa leftover and used that with 4 strips of bacon. Steamed 2 heads of cauliflower. Cooked some onions with bacon (removed from pan, cleared out grease, then put back in to finish and added chopped kielbasa pieces to warm.) Also added some uncooked chopped onion when mixing all in the casserole pan. Prob 1 - 1..5 cups of sour cream was stirred into the "potato layer" and about two ounces of sharp cheddar cheese. Also added garlic salt. (Went a little to heavy with the garlic salt, when added to the bacon and kielbasa it was a bit salty. Will need to add some more steam cauliflower to even out.) Took more time that what was noted, I'd say an hour if your coring and cutting/steaming your own cauliflower. All was warm when mixed for casserole pan, so just broiled it on top until cheese was melted. About 10-15 min.

modified a bit. Microwaved the cauliflower for a few minutes. Cooked chorizo in a pan. removed chorizo and put cauliflower in the pan with the chorizo fat until almost tender. added rest of ingredients and cooked per instructions. It was fabulous!

so good, my kids loved it

Absolutely delicious, particularly with mashed potatoes! If you don't steam the cauliflower for long enough to begin with (like I did), just stick it in the oven for a little bit longer and it will still turn out great.

Great! We love it and have made it a few times since. It’s a great way to eat cauliflower, especially if you have someone not so fond of it in your midst.
