If steaming the cauliflower, you can do it for about 5 min for tender cauliflower flowerettes. For pure vegetarian version, forgo the first part of cooking bacon and use bacon bits (soy based), about a 1/4 cup mixed in and 1/4 cup for sprinkling on top. May not require as much cheese depending on your quantity of cauliflower. It was a hit!

We loved this meal! I used normal mayo and full fat sour cream but I put in a sprinkle of paprika. I did this as a side to a parmesan and herb crusted chicken tenderloins.

LOVE, LOVE, LOVED this recipe. Of course I used regular mayo, and low, not no-fat sour cream. Very tasty, and good for a few days for lunches!!

Not bad but definitely missing that "oh my god, this is amazing!!" factor. Will make again as it would be a good side for steak or chicken. Didn't change the recipe at all.
