  • 5 cloves garlic (– crushed & chopped)
  • 1 sweet onion (medium, – sliced)
  • 1 pint grape tomatoes (– halved)
  • 1 cup fresh parsley (– chopped)
  • 1 quart button mushrooms (– sliced)
  • 3 tablespoons olive oil
  • romano cheese (for grating)
  • 1 box fettuccini

    Directions

    1. In a large frying pan heat the olive oil and sauté the zucchini until they are a beautiful golden color.
    2. Remove the zucchini from the pan and place on a paper towel.
    3. In the frying pan add a little more olive oil and sauté the onion and mushrooms until the onions are well caramelized.
