Ingredients

  • 250 grams flour
  • 150 grams spelt flour
  • 100 grams quinoa flour
  • 11 grams baker's yeast
  • water (45 cl.)
  • 1/2 teaspoon salt

Directions

  1. In the bowl of the electric mixer or food processor, combine the flours, yeast, water and salt. Knead for 7-8 minutes to get a nice dough ball.
  2. Let the dough rise covered with a damp cloth in a warm place for 40 minutes, until it doubles its volume.
  3. On a lightly floured surface, roll out the dough and divide it into 7-10 loaves of desired size.
  4. Place the balls on a parchment paper and let rise for 40 minutes (covered with a damp cloth). Meanwhile preheat the oven to 200 degrees Celsius.
  5. Bake the loaves (depending on size) for 17 to 25 minutes.

My first attempt trying this little quinoa bread recipe and it was pure perfection. The bread had a crispy crust with a dough-like inside. Spread butter on it and eat it while it's warm to get the best flavorful experience.
