This recipe for Little Corn Flour Buns is sweet, hearty, and perfect to pair with a pot of chili or stew. There are 15 of these little buns per recipe, so bring them to a backyard barbecue.

Ingredients

  • 200 grams corn flour
  • 20 grams fresh yeast
  • 1 teaspoon sugar
  • 3 tablespoons water (lukewarm)
  • 400 grams flour
  • 1 1/2 teaspoons fine salt
  • 2 tablespoons olive oil
  • boiling water (50 cl.)

Directions

  1. 1In a large bowl, combine the corn flour and boiling water.
  2. 2Mix and let stand for 10 minutes.
  3. 3In a small bowl, crumble the yeast and dissolve it with the sugar and 3 tablespoons of warm water, cover and let stand 10 minutes.
  4. 4To the cornstarch mixture, add flour, salt, yeast, and olive oil.
  5. 5Using the food processor, knead for 5 minutes. The dough will be very sticky.
  6. 6Let the dough rise for 1 hour until doubled in volume.
  7. 7Transfer the dough to a floured surface, knead it a little.
  8. 8Form small balls of dough.
  9. 9Transfer to brioche tins and let raise for one hour.
  10. 10Preheat the oven to 200 degrees Celsius.
  11. 11Bake for 20 minutes.
