Ingredients

  • 18 ounces linguine
  • 1 bunch broccolini (halved lengthwise, thick stems halved)
  • 2 tablespoons olive oil
  • 3 cloves garlic (finely chopped)
  • 1 Thai chili (seeded, sliced)
  • 7 ounces ricotta cheese

Directions

  1. Cook pasta in boiling, salted water for 5 mins. Add broccolini and cook until pasta is al dente. Drain, reserving 1/4 cup cooking liquid.
  2. Meanwhile, in a small frying pan, heat olive oil over medium heat. Cook garlic and chili until starting to brown. Add linguine, broccolini and reserved cooking liquid and toss to combine. Season. Add ricotta and toss to combine.
