Description

Speck lends smokiness and onions sweetness to this unfussy tomato sauce, which simmers atop the stove in the time linguine takes to boil. Plan on adding the cooked pasta to the sauce — letting them cook together right before serving yields the most inspiring results. Garnish the dish with Parmesan and fresh basil. The sauce can be made up to three days in advance and stored, covered, in the refrigerator.

Ingredients

  • 1/2 onions (peeled and diced)
  • 50 grams speck (or smoked ham, chopped)
  • 28 ounces diced tomatoes (canned, with basil)
  • extra-virgin olive oil
  • 350 grams linguine
  • parmesan cheese (grated)
  • fresh basil (minced)

Directions

  1. In a frying pan, heat 4 tablespoons of oil and add the onion and speck. Saute for a few minutes.
  2. Add the tomato and cook for another 10 minutes.
  3. Cook the pasta in boiling salted water for 9 minutes.
  4. Drain the and add to the tomato mixture.
  5. Serve sprinkled with parmesan and basil.
