These are very similar to potato pancakes, or latkes, that the Jewish make. They are simple and you can really have fun with them. My daughter likes cheese in hers. My son prefers to put some sour cream and bacon bits on top. Because each one is made specifically, you can customize them for each person. You can have a whole batch together in under 10 minutes. They are so easy, yet they are so flavorful.
