  • 1 pound lean ground turkey (or chicken)
  • 5 tablespoons hoisin sauce (I use Lee Kum Kee)
  • 1 tablespoon soy sauce (low-sodium or regular)
  • 2 teaspoons Sriracha (optional)
  • 1 tablespoon rice vinegar
  • 1 1/2 teaspoons sesame oil
  • 1 teaspoon honey
  • 1 tablespoon minced fresh garlic (3 cloves)
  • 1 tablespoon fresh ginger (peeled and minced)
  • 2/3 cup sliced green onions (white and light green portion, plus more green portion for serving)
  • 1 medium carrot (peeled and shredded, 1/2 cup)
  • 8 ounces water chestnuts, drained and chopped (small)
  • 1 head bibb lettuce (or iceberg lettuce)
