Lemonade Scones with Strawberry Jam and Whipped Cream

  • 3 1/3 cups self rising flour
  • 2 1/4 cups heavy cream
  • 1 cup lemonade (chilled)
  • 1 tablespoon powdered sugar
  • strawberry jam (to serve)

Directions

  1. Preheat oven to 425°F. Grease and flour a 9 inch square cake pan.
  2. Sift flour into a bowl. Add 1 cup cream and lemonade. Turn dough out onto a lightly floured surface and press into a 1 inch thick round. Cut into 16 - 2 inch rounds and place, side by side, in prepared pan. Bake for 15-20 mins, or until golden. Transfer to a wire rack to cool.
  3. Meanwhile, whip remaining cream and powdered sugar to soft peaks. Serve scones with whipped cream and jam.
