Ingredients

  • 1 lemon (zested and juiced)
  • 2 cloves garlic (bruised)
  • 1 tablespoon dried oregano
  • 1 red chili peppers (long, finely chopped)
  • 2 tablespoons olive oil
  • 2 1/4 pounds chicken wings
  • 1 pound cherry tomatoes
  • 10 1/2 ounces asparagus

Directions

  1. Combine lemon zest, lemon juice, garlic, oregano, chili and 1 tbsp oil in a shallow bowl. Add chicken wings and toss to coat. Cover and chill for 1 hour, or overnight, to marinate. Set aside at room temperature for 15 mins before cooking.
  2. Preheat broiler. Drain chicken, discarding garlic. Season chicken. Broil for 20-25 mins, turning frequently and brushing with marinade, until browned and cooked through.
  3. Meanwhile, heat remaining oil in a frying pan over medium heat. Sauté tomatoes and asparagus until tender. Serve with chicken wings.
