Lemon and Vanilla Cake

Ingredients

  • 4 ounces butter (softened)
  • 3 ounces cream cheese
  • 1/2 vanilla pod (seeds scraped out)
  • 1 cup sugar
  • 3 eggs
  • 1 2/3 cups all purpose flour
  • 1 teaspoon baking powder
  • 2 tablespoons lemon juice
  • 1/2 lemon (grated zest)
  • 1 1/4 cups powdered sugar
  • 3 tablespoons 1% milk

Directions

  1. Preheat the oven to 325°F. Grease an 8 inch diameter springform pan. Beat the butter, cream cheese, vanilla seeds and sugar with the whisk of a mixer until creamy. Beat in the eggs one at a time. Mix the flour, baking powder and a pinch of salt together and beat in along with the lemon juice and zest. Spoon into the pan and smooth out. Bake for 45-50 mins, until a skewer comes out clean. Allow to cool.
  2. Sift the powdered sugar into a bowl and stir in enough milk to make a smooth icing. Turn the cake out of the pan and spread over the icing, allowing it to drizzle down the sides. Allow to dry.
