Ingredients

- 4 ounces butter (softened)
- 3 ounces cream cheese
- 1/2 vanilla pod (seeds scraped out)
- 1 cup sugar
- 3 eggs
- 1 2/3 cups all purpose flour
- 1 teaspoon baking powder
- 2 tablespoons lemon juice
- 1/2 lemon (grated zest)
- 1 1/4 cups powdered sugar
- 3 tablespoons 1% milk
Directions
- Preheat the oven to 325°F. Grease an 8 inch diameter springform pan. Beat the butter, cream cheese, vanilla seeds and sugar with the whisk of a mixer until creamy. Beat in the eggs one at a time. Mix the flour, baking powder and a pinch of salt together and beat in along with the lemon juice and zest. Spoon into the pan and smooth out. Bake for 45-50 mins, until a skewer comes out clean. Allow to cool.
- Sift the powdered sugar into a bowl and stir in enough milk to make a smooth icing. Turn the cake out of the pan and spread over the icing, allowing it to drizzle down the sides. Allow to dry.
