Description

Celebrate the arrival of warmer weather and the dawn of springtime with this refreshing panna cotta. Featuring the citrus tang of lemon and the tropical nuttiness of coconut, this panna cotta has a rich and smooth custard texture. Topped with cherry jam, this recipe is a must make when you have company coming. Best made the night before or at least 4 to 5 hours before serving to allow for time to cool in the refrigerator.

Ingredients

  • 400 milliliters cream
  • 2 Greek yogurts
  • 150 grams sugar
  • 1 tablespoon grated coconut
  • 1 lemon zest (and juice)
  • 4 gelatin sheet

Directions

  1. In a saucepan on low heat, add the cream, coconut, and sugar, stirring well.
  2. Add the lemon juice and zest.
  3. Remove from heat just before mixtures starts to boil, and let infuse for about 30 minutes.
  4. Hydrate the gelatin sheets in cold water, drain well. Add to cream mixture, and stir until gelatin is completely dissolved. Whisk in the yogurt without beating.
  5. Place in serving dishes, and refrigerate for at least 4 to 5 hours, or overnight.
  6. Before serving, add a teaspoon of cherry jam on top of the panna cotta, serve immediately.
