Description

Made with no butter the tang of natural yogurt and lemon is tempered by the sweetness and nuttiness of coconut. A light and fluffy cake with a wonderful texture throughout.

Ingredients

  • 4 eggs
  • 260 grams sugar
  • 1 lemon juice (and zest)
  • 125 grams margarine
  • 1 natural yogurt
  • 100 grams grated coconut
  • 250 grams flour
  • 1 teaspoon baking powder
  • salt

Directions

  1. 1Preheat oven to 180 degrees Celsius.
  2. 2Grease a pan with butter and sprinkle it with plenty of sugar. Set aside.
  3. 3Whisk well the eggs with sugar, juice, and lemon zest.
  4. 4Soften the butter in a microwave and add to the previous mixture, adding the yogurt and the coconut, too.
  5. 5Finally, add flour, baking powder. and a pinch of salt. Mix well without whisking.
  6. 6Place the dough in the pan and bake for about 40 minutes.
  7. 7Check the cooking with a toothpick. Unmold and let cool.
