This no butter lemon sheet cake is light and fresh. Made with fresh lemon zest and warm milk, each bite of this cake will melt in your mouth. A wonderful treat on a warm summer evening.

Ingredients

  • 4 eggs
  • 275 grams sugar
  • 2 lemons zest (small)
  • 250 milliliters milk
  • 175 milliliters olive oil
  • 375 grams flour
  • 1 teaspoon baking powder
  • 1/2 cup milk (warm)
  • powdered sugar (for garnish)

Directions

  1. Preheat oven to 180 degrees Celsius.
  2. Grease a baking tray with margarine and sprinkle with flour. Set aside.
  3. In a bowl, whisk the egg yolks with 175 grams of sugar, and the lemon zest.
  4. Add 250 millileters of milk and oil. Whisk again.
  5. Add the flour and baking powder, and mix. Set aside.
  6. In another bowl, whisk the egg whites and the remaining 100 grams of sugar, until stiff.
  7. Add spoonfuls of the whites to the dough, and gently mix in from top to bottom.
  8. When everything is well mixed, place the dough on the tray, and bake for 35 to 40 minutes.
  9. Remove from oven.
  10. While the cake is still warm and in the tray, prick with a toothpick, or skewer stick, and sprinkle with 1/2 cup of warm milk.
  11. Allow it to cool.
  12. Cut the cake into squares, and sprinkle with powdered sugar.

This cake was so good. Super moist with a little bit of a gooey consistency going on. It also has just the perfect mix of sweet and lemony flavor. I don't think I got enough of the first, I might have to make another. I definitely recommend it.
