- 1 tsp. Dijon mustard
- 1/4 cup apple cider vinegar
- 1/4 cup lemon juice
- 1 Tbsp. fresh thyme
- 1/4 tsp. sea salt
- 1 1/2 cups extra-virgin olive oil

Directions
- Finely chop the shallot and garlic. Combine in a smaill bowl with the mustard, vinegar, lemon juice, thyme and salt.
- Slowly stream in the oil, whisking constantly, Taste and add salt if necessary.
- Store in an airtight container in the refrigerator for up to 1 week.
