  • 1/2 cup oil
  • 1/4 cup lemon juice
  • 1 tablespoon grated lemon rind
  • 1 teaspoon oregano (chopped)
  • 1 teaspoon thyme (chopped)
  • 24 shrimp heads (large tiger, removed, shells intact)
  • lemon wedges (to serve)

Directions

  1. Combine oil, lemon juice, lemon rind and herbs in a bowl. Season to taste. Set aside 1/3 marinade in a separate bowl. Combine shrimp and 2/3 marinade and toss to coat. Cover and refrigerate for 1 hour.
  2. Preheat a grill on low. Thread shrimp carefully onto metal skewers. Cook for 3-4 minutes each side, brushing frequently with reserved 1/3 marinade. Serve with lemon wedges.
