Spread the batter thinly across the baking sheet, making the dough layer too thick will prevent an even baking process and result in a half-baked cookie. Finish off the look with a coat of granulated sugar and lemon or orange zest.

Ingredients

  • 200 grams butter
  • 100 grams granulated sugar
  • 1 lemon
  • 1 orange
  • 1 teaspoon baking powder
  • 350 grams flour

Directions

  1. Preheat oven to 180 degrees Celsius.
  2. With an electric mixer, beat butter and sugar until creamy.
  3. Gradually, add the zest, baking powder and flour.
  4. Mix with your fingers until smooth.
  5. Turn the dough into a lightly floured surface and roll it out into a circle at least 1 cm thick.
  6. With a cookie cutter, cut 12 rounds of dough.
  7. Prick each round with a fork.
  8. Refrigerate for 10 minutes.
  9. Bake 20 to 25 minutes until lightly golden.
  10. While still hot, sprinkle with granulated sugar.
  11. Let cool on a wire rack.
