Ingredients

  • 50 grams margarine (softened in the microwave)
  • 100 grams sugar
  • 1 lemon zest
  • 1 whole egg
  • 5 tablespoons milk (or more)
  • 260 grams flour
  • 1 egg yolk (for brushing)
  • 3 tablespoons milk

Directions

  1. Start by beating the butter, sugar, and lemon zest.
  2. In another bowl, beat the egg with the milk and then add it to the first bowl.
  3. Gradually add the flour, kneading it into the mix until it turns into a malleable ball of dough.
  4. Wrap it in plastic wrap and refrigerate it for half an hour.
  5. Preheat the oven to 180 degrees Celsius.
  6. Set up a baking tray with nonstick baking tray.
  7. Remove the dough from the refridgerator and make small rolls, shaping them into rings.
  8. Place them on the tray and brush them with egg yolk mixed with the milk.
  9. Bake the rings until they are golden brown.
  10. Remove them and let them cool on a cake rack. Store in an airtight box.

These look like mini donuts and have about the same consistency of ones that you could buy in a bakery. They are really easy to make, and to make a lot of. Love the lemon zest flavor. They turn out sweet, but thanks to the zest, it's a perfect balance with the sugar in the dough. We love these “donuts” for breakfast or a nice snack.
