Ingredients

  • 200 milliliters sunflower oil
  • 200 grams sugar
  • 1 pinch salt
  • 2 eggs
  • 125 grams lemon yogurt
  • 1 lemon
  • 250 grams flour
  • 1 tablespoon baking powder
  • 300 grams powdered sugar
  • 4 tablespoons lemon juice

Directions

  1. Preheat the oven to 160 Celsius.
  2. Combine the oil and sugar. Add the salt, eggs, and yogurt, little by little. Beat well for 5 minutes before adding the lemon zest and rind.
  3. Mix the flour with the baking powder and add to the batter. Mix well and pour into a muffin tin.
  4. Bake for 20-25 minutes. Remove from oven and cool.
  5. To make the icing, mix the powdered sugar with the lemon juice and drizzle over the muffins.

These muffins are light and lemony. I garnished them with a curl of lemon zest on top. Next, I grouped them on a large lemon shaped platter. They’re bright and cheery for breakfast and brunch or after dinner with a cup of tea.
