Description

Made with sunflower oil and yogurt instead of butter, these Lemon Cupcakes have a lovely moist texture. Ingredients

200 milliliters sunflower oil
200 grams sugar
1 pinch salt
2 eggs
125 grams lemon yogurt
1 lemon
250 grams flour
1 tablespoon baking powder
300 grams powdered sugar
4 tablespoons lemon juice

Directions

1Preheat the oven to 160 Celsius.
2Combine the oil and sugar. Add the salt, eggs, and yogurt, little by little. Beat well for 5 minutes before adding the lemon zest and rind.
3Mix the flour with the baking powder and add to the batter. Mix well and pour into a muffin tin.
4Bake for 20-25 minutes. Remove from oven and cool.
5To make the icing, mix the powdered sugar with the lemon juice and drizzle over the muffins.
