Description

Lemon and garlic are a classic flavor pairing with asparagus, and this quick, delicious side dish shows why.

Ingredients

  • 2 cloves garlic
  • 1 lemon
  • 1 1/4 pounds asparagus
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • black pepper

Directions

  1. Preheat the oven to 400°F.
  2. Line a large baking sheet with parchment paper.
  3. Crush and finely mince the garlic.
  4. Grate 1 teaspoon of lemon rind.
  5. Trim the rough ends from the asparagus and arrange the spears on the baking sheet.
  6. Drizzle the asparagus with olive oil and sprinkle with salt, minced garlic, and black pepper, to taste.
  7. Roast for 10-12 minutes on middle rack of oven.
  8. Remove the asparagus from the oven when it is tender.
  9. Sprinkle the lemon rind over the asparagus.
  10. Slice the lemon in half. Squeeze the juice of half a lemon over the asparagus. Serve immediately.
