This simple and easy recipe for lemon curd will help you use up your lemons. Made with just 4 ingredients, this lemon curd is ready in just over a half an hour. Presented in a jar with a ribbon tied around it, lemon curd makes a great homemade gift for friends, but make sure to keep some for yourself because it is absolutely delicious! Spread it on your toast, muffin, or favorite baked good.

Ingredients

  • 6 lemon
  • 200 grams cane sugar
  • 6 eggs
  • 2 tablespoons corn starch (level tbsps.)

Directions

  1. In a heavy-bottomed pot on low heat, add the lemon juice and sugar and stir until dissolved.
  2. In a separate bowl, beat the eggs well.
  3. Dilute the cornstarch in a splash of cold water and then beat it into the eggs.
  4. Stream the hot lemon mixture into the eggs, whisking constantly.
  5. Pour everything back into the pot and raise the heat to medium. Keep whisking until slightly thickened.
  6. Pour into individual jars and refrigerate. It will last 5 days refrigerated.
