Description

Made with sunflower oil and yogurt instead of butter, these Lemon Cupcakes have a lovely moist texture. Ingredients

200 milliliters sunflower oil
200 grams sugar
salt
2 eggs
125 grams lemon yogurt
1 lemon
250 grams flour
1 tablespoon yeast
300 grams superfine sugar
4 tablespoons lemon juice

Directions

1Preheat the oven to 160 degrees Celsius.
2In a bowl, mix the sunflower oil and sugar. Slowly add a pinch of salt, the eggs and yogurt. Beat for 5 minutes, and then add the lime zest and lime juice. Beat again.
3Pour the batter into a cupcake pan and bake for 20 to 25 minutes.
4Remove from the oven and let the cupcakes cool.
5In a bowl, add the superfine sugar and lemon juice and mix well.
6Pour onto the cupcakes and serve.
