Description

Lemon cookies are a staple of English tea time. However, you can bring all the sophistication of a high tea to your table with these lightly sweetened lemon cookies. Made with fresh lemon juice and zest, each bite of these lemon cookies have a burst of refreshing citrus flavor. These cookies make a great addition to a glass of iced tea on a warm summer afternoon. They also pair wonderfully with a hot cup of tea in the wintertime.

Ingredients

  • 200 grams butter (cubed and room temperature)
  • 170 grams sugar
  • 270 grams flour
  • 1/2 teaspoon salt
  • 2 lemon
  • 2 tablespoons fresh lemon juice

Directions

  1. In a food processor, pulse together the butter, sugar, flour, salt, and lemon zest.
  2. When it starts to form a ball, stop.
  3. Add the lemon juice and pulse another 2 to 3 times.
  4. Roll the dough out into a long sausage shape and wrap in plastic wrap.
  5. Refrigerate for 30 minutes.
  6. Preheat the oven to 160 degrees Celsius.
  7. Line a baking tray with parchment paper.
  8. Remove the dough and the plastic wrap.
  9. Cut the dough into 1-centimeter wheels and place them on the baking tray.
  10. Bake for 10 minutes or until the edges are golden.
  11. Do not move them much until they have cooled.
