Sort of a cross between a quick bread and a soft and tender cookie, these delightful treats--which resemble French madeleines a bit in their taste and texture--are perfect for serving with afternoon tea, tucking into a kid's lunchbox, or offering as a not-too-sweet dessert after a weeknight meal. Grated lemon zest and fresh lemon juice flavors the batter--and results in a wonderfully fragrant cookie. Dust with powdered sugar, if desired.

Ingredients

  • 1 medium egg
  • 100 grams sugar
  • 150 grams flour
  • 1 teaspoon baking powder
  • 80 grams softened butter
  • 1 lemon
  • 20 grams water

Directions

  1. Preheat the oven to 180C.
  2. Beat the egg whites to stiff peaks.
  3. Beat the sugar with the butter until foamy and light.
  4. Add the flour, baking powder, egg yolk, water, and grated lemon peel and juice.
  5. Last, fold in the stiff egg whites carefully.
  6. Fill the mini-loaf cookie molds to 3/4.
  7. Bake for approximately 25 minutes (until lightly golden).

These lemon cookies were so delightful to bake and to eat. They were a semi hard cookie that crumbles when you bite into it. The lemon really gave it that twang I like and it was perfectly sweet. They taste even better when you eat them while they are still warm. I plan to bake a batch of these 5 star lemon cookies for church on Sunday.
