Description

This lemon chicken is inspired by the dish of the same name that you can find in Chinese restaurants. Chicken cutlets are lightly coated and fried for a crisp and delicate texture. A simple sauce is made from sugar, lemon juice, and chicken broth then thickened with cornstarch for a sweet and sour flavor. The sauce coats the chicken and imparts a ton of bold flavor, serve this dish with rice and vegetables and drizzle any excess sauce over the rice.

Ingredients

  • 6 chicken fillets (large)
  • soy sauce
  • salt
  • 1 eggs (beaten)
  • 25 grams corn starch
  • 1/2 tablespoon baking powder
  • cooking oil
  • 70 grams sugar
  • 1 lemon
  • 350 milliliters chicken broth
  • 4 slices lemon

Directions

  1. 1Marinate the chicken in a small bowl with enough soy sauce to cover the chicken. Cover with plastic wrap and marinate for 30 minutes in the refrigerator.
  2. 2Mix the beaten egg with the baking soda and half of the cornstarch. Coat the marinated chicken with this mixture.
  3. 3Fry the chicken in very hot oil, remove the excess oil with absorbent paper.
  4. 4Add the sugar, lemon juice, chicken broth, and the remaining cornstarch in a blender. Add salt to taste and puree until smooth.
  5. 5In a saucepan, cook the sauce along with the lemon slices on low heat.
  6. 6Place the chicken in the lemon sauce to finish cooking, about 5 minutes.
