Ingredients

  • 1/3 cup walnuts (toasted, finely chopped)
  • 2 tablespoons granulated sugar
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground ginger
  • 4 1/2 tablespoons unsalted butter (melted)
  • 1/2 pound cream cheese (at room temperature)
  • 1/4 cup heavy cream
  • 1/3 cup powdered sugar (+ extra, to dust)
  • 1 teaspoon extract (vanilla bean)
  • 1 teaspoon lemon zest
  • blueberries (to serve)

Directions

  1. Grease 4 - 3 inch tart rings. Transfer to a serving plate.
  2. In a food processor, process walnuts, sugar, cinnamon and ginger until finely chopped. Add butter and process until combined. Press walnut mixture into base of rings. Chill for 15 mins, or until firm.
  3. Meanwhile, beat together cream cheese, heavy cream, powdered sugar, vanilla and lemon zest until smooth. Distribute between prepared rings, smooth tops and chill for 30 mins.
  4. To serve, carefully remove tart rings. Top with blueberries and dust with powdered sugar.
