Ingredients

  • 3 eggs (separated)
  • 80 grams sugar
  • 60 grams cream (almond, you can substitute almond butter thinned with a little almond milk until runny)
  • 2 lemon
  • 40 grams flour
  • 40 grams ground almonds
  • 1 teaspoon baking powder

Directions

  1. 1Preheat the oven to 170 degrees Celsius.
  2. 2Line a 20-centimeter diameter cake pan with parchment paper.
  3. 3Cream the egg yolks and sugar together.
  4. 4On high speed, beat in the almond cream and lemon juice.
  5. 5Then add the lemon zest, flour, ground almonds, and baking powder.
  6. 6Separately, whisk the egg whites into stiff peaks, then fold them into the original mixture.
  7. 7Bake for 25 minutes or until a toothpick inserted into the middle comes out clean.
