  • 2 tablespoons tomato puree
  • 1 sweet potato (small, roughly 250g, chopped into 1cm cubes, ish!)
  • 1 red pepper (chopped into 1cm chunks, ish!)
  • 1 can coconut milk
  • salt

  • 600 grams beef (leftover, chopped into bitesize pieces, or 2 x 300g steaks – see notes)
  • 1/2 lime (plus extra for garnish)
  • 2 tablespoons fresh coriander (/cilantro, plus extra for garnish)
