  • 1 leeks (sliced)
  • 1/2 onions (sliced)
  • 1 tablespoon butter
  • 1 carrots (peeled and sliced)
  • 1 potatoes (peeled and cubed)
  • 1 apples (peeled, cored and cubed)
  • 1 liter water
  • 2 cubes vegetable stock
  • salt
  • pepper
  • 1 pinch nutmeg
  • spring onions (sliced)
  • 1 tablespoon sliced almonds

    Directions

    1. 1. Melt butter in a pot, fry onion and leek, till translucent.
    2. 2. Add carrot, potato, apple, pour in water, add stock cubes, salt, pepper and nutmeg.
    3. 3. Bring to boil, reduce heat, simmer 20 minutes.
    4. 4. Mix soup with blender.
    5. 5. Serve sprinkled with mint leaves, spring onion and almonds.
