  • 1 tablespoon roasted rice powder
  • 3 kaffir lime leaves (chiffonade)
  • 1 thai chile (sliced thin)
  • 3 scallions (sliced thin)
  • garlic (crispy, to garnish)
  • 10 mint leaves (chiffonade)
  • 10 cilantro leaves (picked)
  • fried eggs (As needed)
  • 2 pounds ground pork
  • water (to cover)
  • 2 tablespoons fish sauce
  • 2 tablespoons lime juice
  • 1 tablespoon brown sugar

Directions

  1. 1. Cover pork in a small amout of water and cook over moderately high heat, breaking up the meat finely, until no pink remains
  2. 2. Drain, season with fish sauce, lime juice and brown sugar
