  • 2 cups basmati rice (organic, Trader Joe’s brand)
  • 24 ounces langoustine (frozen, thawed and drained, Trader Joe’s brand)
  • 1 jar curry (Trader Joe’s brand, Simmer Sauce)
  • 1 cup frozen peas
  • 4 cloves garlic (fresh, peeled and chopped)
  • 1 onion (large, finely chopped)
  • 2 teaspoons kosher salt
  • 1 teaspoon crushed black pepper
  • 1 teaspoon ground cumin
  • 2 teaspoons curry powder (ground)
  • 1/2 teaspoon ground turmeric
  • 1 jar curry (Simmering Sauce, Trader Joe’s)
  • 1/2 teaspoon ground cinnamon
  • 1/2 cup coconut water
  • 3 tablespoons seed (grape, or sunflower oil)
  • 1/4 bunch fresh flat leaf parsley (finely chopped, for garnish)
