Description

Aromatic and flavorful, this lamb dish can be prepared in one pot to minimize clean up. The onions, garlic, and meat are browned together before the addition of wine, vinegar, tomatoes and herbs. This mixture is then cooked partially covered for 90 minutes, allowing you plenty of time to get other things done in the meantime. This lamb stew is great for a cool winter weekend. Serve alongside your favorite flatbread or rice with greek yogurt.

Ingredients

  • 1 leg of lamb (boned and cut into pieces)
  • 2 onions (cut into rings)
  • 2 cloves garlic (chopped)
  • 250 milliliters red wine (full-bodied)
  • 2 tablespoons vinegar (balsamic fig, alternatively Modena)
  • 400 grams diced tomatoes (canned)
  • 200 grams dried fig (whole)
  • 1 tablespoon ground cinnamon
  • 1 teaspoon sugar
  • bay leaf
  • ground black pepper
  • olive oil
  • salt
  • greek yogurt
  • paprika

Directions

  1. Heat a drizzle of oil in a heavy pan and fry the onion until soft.
  2. Add the garlic and meat. Cook until brown.
  3. Add the wine, vinegar, and tomatoes, and bring to a boil.
  4. Reduce the heat and add the bay leaf, cinnamon, sugar, and figs. Season to taste.
  5. Partially cover and cook for 90 minutes or until the meat is tender.
  6. Serve with Greek yogurt and sprinkled with paprika.
