Ingredients

  • 12 5/16 ounces dark rye flour (350 g / a generous 3 ¾ cups)
  • 7 ounces whole wheat bread flour
  • 1 teaspoon salt
  • 1/2 tablespoon instant yeast
  • 1/4 cup molasses
  • 2 tablespoons barley malt syrup (or dark honey)
  • 1/3 cup lager beer (I used Birra Moretti)
  • 1/3 cup warm water
  • 2/3 cup lager beer
  • 3 1/2 ounces dark rye flour (100 g or 1 cup + 2 tbsp)
  • 1 teaspoon raw sugar
  • 1 handful rye flakes (or large-flake oats)
