Description

This Lactose-Free Zebra Cake is a great dessert option for those with dairy sensitivities or allergies. Using olive oil and water, this cake requires no butter or milk--however you can use lactose free milk if you so desire. An attractive marbling effect is achieved by adding cocoa powder to half of the cake batter and then swirling with the vanilla cake batter, giving this cake its signature look and name, zebra cake. Be sure to whip the egg whites until stiff in order to achieve a light and fluffy cake.

Ingredients

  • 5 eggs
  • 250 grams sugar
  • 2 tablespoons vanilla extract
  • 125 milliliters water (or lactose-free milk)
  • 250 milliliters vegetable oil
  • 375 grams flour
  • 2 1/4 teaspoons dry yeast
  • 2 tablespoons cocoa powder

Directions

  1. Preheat the oven to 160 degrees Celsius.
  2. Beat the egg yolks, sugar, and vanilla extract until frothy. Add the water, oil, flour, and yeast. Mix until smooth.
  3. Whip the egg whites to soft peaks and fold into the yolk mixture.
  4. Divide the batter into half and add the cocoa powder to one of them.
  5. Grease a baking mold and add 2 spoonfuls of each batter at a time in the middle of the mold to achieve the “zebra” effect. Continue until all the batter has been added.
  6. Bake for 50 to 60 minutes.
