Ingredients

  • 2 kilograms mussels (live, approx. 40 individual mussels)
  • 1/2 red capsicum (medium sized)
  • 1/4 cup peanut oil
  • 7 spring onions (trimmed and cut into 5 cm lengths)
  • 4 ginger (slices)
  • 3 garlic cloves (crushed)
  • 3 red chili peppers (large, cut in half lengthways and seeds removed)
  • 1 red onion (small, cut in half and then into wedges)
  • 2 tablespoons black beans (salted)
  • 1/4 cup shao hsing wine (or dry sherry)
  • 1/3 cup water
  • 2 tablespoons light soy sauce
  • 2 teaspoons white sugar
  • 1 teaspoon sesame oil
  • 2 chillies (red bird's eye, sliced)
  • 2 teaspoons malt vinegar
  • 10 grams samphire (picked native, stems)
  • 10 grams parsley leaves (picked native sea)
  • 1/4 cup thai basil (picked sweet)
  • 1/4 cup mint leaves (picked)
