  • 1 tablespoon ponzu (tamari, or soy sauce)
  • 2 tablespoons rice vinegar (I like citrus rice vinegar)
  • 1/2 teaspoon garlic (minced)
  • 1 teaspoon fresh ginger (minced)
  • 1 teaspoon sesame oil
  • 8 ounces korean buckwheat noodles (or Japanese, see notes)
  • 1 red bell pepper (julienned)
  • 1 cup matchstick carrots
  • 3 scallions (chopped, reserve some for garnish)
  • toasted sesame seeds (for garnish)
  • 4 eggs (hard-cooked, optional, halved lengthwise)
