  • 3 kiwis (peeled)
  • 1/2 cup sugar
  • 1 lime (juiced)
  • 1 tablespoon powdered gelatin
  • lemon sorbet (to serve)

Directions

  1. Gently pulse kiwi in a blender and set aside. In a medium saucepan, combine sugar and 1 cup water and stir on low heat, until sugar has dissolved. Increase heat to high and boil 2 mins. Add kiwi and lime juice. Cover and cool 5 mins. Sprinkle in gelatin and stir until dissolved. Strain mixture through a fine sieve. Pour into small glasses or serving bowls and chill 3 hours, until set. Top with small scoops of sorbet to serve.
