Very good. Used a can of diced jalepenos and doubled the tortillas (1/2C chicken broth added). Added extra cheese too but that’s just our preference. Will make again and again.

It was excellent!! My husband and I like things a little on the spicy side, so I added some jalapeños and also on the top layer I added cherry tomatoes.. I also opened up a can of Mexican style corn which we ended up mixing with the casserole,, which really really enjoyed... This is a recipe that I will use forever and pass it on!!!!

I’ve been making King Ranch Chicken for more than 20 years. My son who is now 27 says it’s his favorite dish from his childhood. He’s a fireman and asked me for the recipe so he could make it for lunch. I found this recipe to be closest to the one I used to make. I made it and it didn’t disappoint! Use corn tortillas, not chips. It’s even better leftover, after all the flavors have had time to sit.

Yummy. I love garlic so I added fresh garlic and replaced the butter with 3 Tbsps of olive oil. I plan to make ths again .

LOVED IT!! Not a large amount of ingredients but loads of flavor!
NOTE: just make sure to use Rotel tomatoes - not Rotelle pasta ;-)

Delicious! Both husband and I loved it! Never heard of this before so I was not sure what it was going to be like at all, especially being my first time using corn tortillas in a casserole (which were amazingly soft and blended right in). I wasn't sure how small to cut them so I diced them in small bite sized pieces! Very easy preparation and a nice comforting weekday meal! Could use a little heat, next time I might add a jalapeño pepper as well. We added Frank's Original and that was a great substitute for our first time! Will definitely make again....soon!
