- 1/4 tsp. cream of tartar (I didn’t have this so didn’t use, mine came out fine)
- 14 oz. sweetened condensed milk
- 1 cup key lime juice
- 3 Tbsp. lime zest (optional)
- 1 1/2 cups heavy cream
- 1/4 cup sugar
- 1/2 tsp. vanilla
- 2 1/2 Tbsp. dark rum
- 3 Tbsp. sweetened shredded coconut (toasted til light golden brown)
- 4 large egg whites
- 1/4 cup sugar
- 1 tsp. vanilla
- 1 pinch salt
