  • 1/2 cup sugar (confectioners', sifted)
  • 3 egg yolks (reserve whites for another use)
  • 2 teaspoons vanilla extract
  • 1 tablespoon water (iced)
  • lime curd (approximately 2 cups)
  • 8 ounces mascarpone (container of a good, drained of any liquid)
  • 1/2 cup confectioners' sugar (sifted)
  • 1/8 cup confectioners' sugar (for dusting tartlets, optional)
  • mint leaves (for garnish, optional)
