I added a little too much cheese (maybe double- oops!), so I threw in some white wine to cut it a little. The extra sauce went great with a piece of bread!

I used diced tomatoes and simmered them down since I didn’t have dried tomatoes. It turned out fantastic! We love this recipe, and my husband requested that it become a regular dish at our house. It was actually really easy to make and that’s saying something because I hate cooking.

I loved it but I think it would have been even better with chicken breast instead of thighs but be sure not to over cook the thighs for they won’t get hard and dry
