This recipe was fairly easy to make. It did not require a lot of ingredients that a regular banana nut muffin requires. I followed directions only substituting 1/3 cup of erythritol with 2 tbsp + 1 tsp of truvia. The muffins were good, a little dry. I suggest only about 18 minutes in oven. Next time I say add: vanilla exact, lemon zest, and baking powder. Overall, a good muffin to satisfy my craving. Also, it appears as if the calorie count is for 8 servings and not 1. Below are before and after pictures.
