Kefir, Pomegranate, and Kiwi Trifle

Pomegranate seeds, kiwi, and kefir may not be on your usual shopping list, but each of these nutritional powerhouses has something to offer besides nutrients, and that's distinctive flavor. Here, they are layered in a parfait-style breakfast or snack with oatmeal, pumpkin seeds, and flax seeds, all of which are also nutritional superstars.


  • 1/2 pomegranate seeds
  • 3 kiwis (peeled)
  • 1/2 cup oatmeal
  • 1 tablespoon pumpkin seeds
  • 1 tablespoon flax seed (clear)
  • 1 cup kefir milk


  1. Arrange the ingredients in layers and serve for breakfast, snack, or dessert.
  2. You can also replace the seeds and oats with 1/2 slice of king cake or other dry cake.
