Description
Made with a creamy mixture of coffee, ricotta and vanilla pudding, these Popsicles are anything but dull. Once the pudding is prepared, the warm mixture is added to the ricotta and it's all passed through a sieve to ensure it's lump-free. Although this recipe calls for Zoku molds, any ice pop mold will do — just remember they need to be frozen a day ahead.

- Bring the milk to a boil with the instant coffee and sugar. Add the pudding mix and prepare the pudding according to the instructions on the package.
- Cool the mixture to warm and add the ricotta cheese, previously put through a sieve, combining well with a whisk to avoid lumps. The result should be a smooth, thick cream.
- Fill the Zoku Mini Pops Molds with the cream mixture, add the sticks and place them in the freezer for at least 3 hours.
- To serve, remove the pops from the molds and place each on a cookie, wait 5 to 8 minutes (they must not be too frozen) and sprinkle with bittersweet cocoa.
