Description

Schwabisch-style German potato salad is defined by its vinegar and mustard-spiked, mayonnaise-based dressing. Thinned with a splash of vegetable broth, this version includes prosciutto — a non-traditional addition — as well as green onions, chives and Parmesan crisps for added flavor. Make it a few hours before serving, but hold off on garnishing with the crips until right beforehand. When boiling the potatoes, don't let them get too soft or they won't retain their shape.

    Directions

    1. In a bowl, add the mayonnaise, vinegar, mustard, and enough broth to make a thin sauce.
