  • 400 grams boiling potatoes

  • salt
  • fresh chives
  • crisps

Directions

  1. In a bowl, add the mayonnaise, vinegar, mustard, and enough broth to make a thin sauce.
  2. Add the potatoes, prosciutto, and green onion, and mix well.
  3. Season with a pinch of salt. Stir carefully to avoid breaking the potatoes.

This made the perfect little side dish for a cook out. I finished it off with some cracked pepper. Parmesan chips are not mentioned in the ingredients but are recommended in the instructions to serve in the side. I was glad I did. The smooth potatoes tasted great with the crunch of the chips.
