  • 150 grams chicken fillet (cut into cubes)
  • 1 cooking apple (thinly sliced, we use granny smith for this)
  • 1 piece ginger (finely chopped)
  • 1 stalk lemongrass (Sereh chopped)
  • 1/4 onion (Bawang Bombay peeled and finely chopped)
  • 1 red chilli (seeded and finely sliced)
  • 2 tablespoons curry powder
  • 1/2 teaspoon chilli powder
  • 2 bay leaves (Daun Salam)
  • 300 coconut milk
  • 1 tablespoon yoghurt
  • 1 pinch black pepper
  • 1 pinch cumin (Jinten)
  • 2 basil leaves
  • 2 shallots (finely sliced)
  • 2 garlic
  • 1 teaspoon paprika

    Directions

    1. Place the chicken fillet in a bowl, mix well with garlic, onion, ginger, chilli, shallots, lemongrass and black pepper.
    2. Sautee the mixture well until fragrant.
    3. Add the lemongrass, curry powder, cumin, bay leaves, basil, paprika powder and apple slices.
