- 12 ounces kale (fresh, washed and coarsely chopped)

- 3/4 cup feta cheese crumbles (about 4 oz.)
- 12 eggs (beaten)
- 1 teaspoon Spike Seasoning (or use any all-purpose seasoning that's good with eggs)

I tweaked the recipe a little by adding some bell peppers, mushrooms, and a little onion. I also used reduced fat feta cheese, as it lowered the Smart Points foe Weight Watchers. Very good - guests and family really enjoyed.
