It’s delicious I made some changes
At the beginning I added a couple of diced tomatoes I needed to cook to the garlic and olive oil (I didn’t use butter)
I chopped the kale before and massaged it in a bowl with olive oil and salt
Used frozen cooked shrimp I had in the freezer and chopped - I added them at the end just before the quinoa and lemon juice
I added a little sumac with the pepper
Mixed in a bit of crumbled feta at the end

My family enjoyed this recipe. I did make a mistake by using pre-cooked shrimp and it was dried out by the time I served the meal. I should have wilted the kale first and added the shrimp to warm it at the end. Nice change from our regular routine

Not bad for a quick meal that can be very versatile. I sautéed mushrooms with the garlic as a previous poster recommended, and the lemon juice absorbed nicely into them and the kale, but the addition of more elements/spices could elevate the flavors further.

Delicious!!! Had to guess on the butter amount. Tripled recipe and it was a hit with my family

I doubled the recipe and as a result used the juice of a whole lemon it was too much

It turned out amazing! I added some fresh diced tomatoes and lemon juice to give it more flavor. i couldnt stop eating it!

I tried this last night. it was super easy. the only things that I modified were the amount for my bf and I. I also added half a red onion to the garlic and butter that you sautee. and i used a garlic herb flavored quinoa. The flavor was the bomb.com

Worked perfectly I added a bit of spinach and half a tomato with the kale and added garlic to the quinoa for a little flavor but all else was the same. This recipe is quick, simple, nutritious, and yummy!

Altered the recipe a bit by adding mushrooms and withholding water. Also used Cajun seasoning instead of red pepper flakes. Family loved it, including my son who doesn’t like quinoa! Super easy to make too. Definitely making this again!

Excellent! Love the basic guideline as well and plan to try some of the suggested variations. Used extra garlic (we always do) and seasoned the shrimp with Penzey’s Cajun seasoning instead of using as much red pepper as called for in the recipe. Definitely want to make again!

Would definitely make again! No modifications made. Pretty much awesome. Make sure you the de-stem the kale first before you put the shrimp on as mine ended up light on kale
