Description
This vegan dish is best wood-fired, but never fear — Chef Tunde shares a way to get that smoky flavor using your stove. Fermented locust beans are the trick to adding umami.

- 3 tomatoes
- 1 habanero chile
- 1 red onion (for purée)
- 1 red onion (for sautéed onions)
- neutral-flavored cooking oil (such as peanut, vegetable, canola, safflower, or corn, for onions)
- 1 Tbsp. kosher salt (more as needed)
- 1/2 tsp. bird's eye chili powder (also known as Thai chili, more or less as desired)
- 1/2 tsp. garlic powder
- 1/2 tsp. dried rosemary
- 1/2 tsp. dried thyme
- 1/2 tsp. ground coriander
- 1 tsp. powdered iru (fermented locust beans)
- 1 Tbsp. whole iru (fermented locust beans)
- 3 bay leaves (fresh or dried)
- 1/4 cup neutral-flavored cooking oil (such as peanut, vegetable, canola, safflower, or corn, for adding to rice)
- 8 cups rice (uncooked)
- kosher salt (for final seasoning, if needed)
- flat leaf parsley (for garnish)

I tried making this two different times with my Nigerian boyfriend and it was bland and the rice never really cooked. His mother could not believe how bad this recipe was, and in her words she had to “use her imagination” to find a way to salvage it. It was a waste of groceries.
